Fatima Sydow Cooks is a cookbook author and TV personality. She appeared in 6 seasons of the popular Cooking show 'Kaap, Kerrie en Koesisters. The co-author of the cookbook' Cape, Curry and Koesisters. The author of the best selling Cookbook named 'Fatima Sydow Cooks'. Fatima specializes in Cape Malay cuisine and has been cooking since the age of 9. From Cape Town South Africa she is fondly referred to the Cape Malay Cooking queen, her down to earth and humble way of teaching how to cook as earned her the title of the trusted go to Cook on Her Facebook page Fatima Sydow Cooks, her UA-cam channel Fatima Sydow Cooks and of course all her cookbooks. Renfred makes pickled fish just in time for Easter
Renfred, Fatima's right hand, tries his hand at making pickled fish. Perhaps a hot cross bun recipe to follow?
Here is Fatima Sydow's pickled fish recipe:
INGREDIENTS
15 pieces of fish (I'm using hake)
6-8 onions peeled and sliced into rings
1/2 a cup of water
1 cup of vinegar
5 bay leaves
1 tsp peppercorns
1 tsp Coriander seeds
1/2 cup of sugar
Salt to taste
2 tablespoons of roasted masala or curry powder or pickled fish masala
2 teaspoons of turmeric
A little cake flour to coat the fish
A little oil to fry fish
1 heaped tablespoon of cornflour mixed with a tablespoon of cold water.
1-2 tablespoon of fine apricot jam (optional)
METHOD
Season the fish with a salt and a little turmeric, dip the seasoned fish in a little cake flour and then fry in shallow oil about two minutes on each side depending on thickness of fish. Place in a big bowl and put aside.
In a large pot, on high heat add the water, vinegar, bay leaves, peppercorns, coriander seeds, turmeric and masala and a heaped teaspoon of salt. Bring to the boil and add the onions that has been sliced into rings... Add half a cup of sugar. Cook on medium heat for 8 minutes until all the flavours has infused into the onions, next add the cornflour mix and stir until you see the sauce thicken, at this stage you can add your apricot jam. Take off the heat and pour over the fish in a bowl... Wait to cool. Cover and place in fridge until ready to eat. Enjoy.
Tips - Do not cook onions for too long or fry them, this is a pickle, meaning the onion should still have a bit of crunch to it. The sugar plays a vital role as it creates the very important sweet and sour taste synonymous with pickled fish made the Cape Malay way. I make mine the day before or else it will not last until the Friday. I use water as well in my recipe. If you are going to make it a month or few weeks in advance, do not add any water to the process, instead add just a bit more vinegar. Should your pickled fish taste on the bland side, too little salt is normally the culprit.

The Cape Malays have a tradition in Cape Town that the 15th Ramadan is marked by drinking Boeber. A milky drink made with sago, vermicelli and optional additions like sultanas or almonds. Fatima Sydow loved celebrating this tradition and would lay the table in all it's glory. Renfred remembers her fondness of this day and makes Boeber himself.

My ten-year-old granddaughter came across breyani recently at a school camp and fell in love, so when she asked me if I would help her make it, I knew there was only one cook for us, the beloved Fatima Sydow. So this old granny is going to have the time of her life introducing her to that lovely, lovely lady, who is so sadly missed not only in Cape Town but whose bubbly personality, infectious giggle, and nurturing spirit touched so many worldwide. May you rest in peace.

Bei uns in Norddeutschland gibt es ein ähnliches Gebäck, es wird Knebbekuchen genannt..Auch ein Hefegebäck mit Anis. Ein Rezept das aus der friesischen Küche stammen könnte, die ja ihren Ursprung im Norden von Hplland haben. Meiner Meinung nach kommt der Name 'Knebbe' von Kniepen ,wie Kneifen 'of knyp' und wenn ich im Video sehe wie die Bolletjies geformt werden, könnte das auch hinkommen.
